I slow cook diced tomatoes with grated ginger, crushed garlic, ground cumin, red chile powder and a smidgen of tamarind to make a tomato chutney. It lasts for abt 10-12 days in the fridge & is an excellent spread over bagel or toasted naan w cream cheese. Or for any wrap or sandwich.
I planted 11 tomato plants this year. I wanted to have plenty to can sauce and salsa. My pantry is now full and the tomatoes just won't quit! I'm so tired of eating them. But I think I could suffer through a few of these recipes... :)
I’m growing 6 different types of tomatoes in pots on my Brooklyn rooftop terrace this year. I’ve has so many BLTs, pan con tomates, caprese sandwiches, and panzanellas that I think I might be turning into a tomato. I even made roasted garlic and tomato sauce, which was delicious.

Oh boy! The ratatouille above can be frozen, so maybe that’s the move if you need a break?

that's so awesome! My only attempt at Brooklyn gardening was thoroughly enjoyed...by the squirrels. :(
Every year I wish I bought in-season tomatoes to appreciate them more. I think I’d start making BLTs and pan con tomate
