I'm wondering if this would work using quinoa instead of rice. Or a mixed grain rice.....like, would I need to brown the chicken longer since quinoa has a shorter cooking time?
What a great podcast and this was a great episode. Molly seems to be a fantastic down to earth person. She has been through so much but each time she comes back stronger and better. This episode encouraged me never stay down and it also made me want to make an awesome sandwich. Thank you for taking the time to put these episodes out.
The chicken / rice recipe is one of my favorites from Cook This Book! That cookbook is filled with so many weeknight bangers. My only note (for anyone planning to make it!) is that the portion sizes are pretty scant — throughout the book — so I’d recommend bumping up the quantities if you’re actually looking to feed 4-6.
