Hi Faye, you’d need to add in richness another way—you could play around with crispy mushrooms + butter, maybe a little miso for bumping up the savory side. It wouldn’t be classic but it would be tasty!

There are so many books offering great ways to use "leftovers" and reduce waste this year. I hope all of these conversations and smart ideas get more people on board with how to reduce their food waste!
