Nice article and recipes! Could I do pasta alla gricia in a vegetarian version?

Hi Faye, you’d need to add in richness another way—you could play around with crispy mushrooms + butter, maybe a little miso for bumping up the savory side. It wouldn’t be classic but it would be tasty!

Okay these pastas look amazing, but what I'm really floored by is how wonderful it is for a professional chef to share the reality that at home, pre-cleaned veggies can be a big freaking help!!!

There are so many books offering great ways to use "leftovers" and reduce waste this year. I hope all of these conversations and smart ideas get more people on board with how to reduce their food waste!
