Asparagus Recipes I’m Planning to Make ASAP

Friends, we are emerging from the cabbage months, and I could not be more excited. My cooking is so ready for everything fresh and green: the ramp leaves, the stalks of green garlic, but especially asparagus.
An asparagus feast can be so simple. Grab a few bunches wherever they are freshest. If you can’t find local ones yet, this re-sweetening trick feels totally weird, but it works.
Rub the stalks with olive oil and some mustard (like the Dijon Original from today’s sponsor, Maille.) You can absolutely roast them, but it’s worth going outside to the grill if you have one. Maybe you cook some fish with it, or chicken, or sausages. But those green stalks could be enough with a mountain of good bread (grill it, too) and some ricotta.
