Love love love zucchini! I grew it in my summer garden this year and it tasted phenomenal! I will definitely need to dig into some of these recipes to use up the rest of the zucchini I have.
I needed the “and love it” part because I have zucchini PTSD (as Harrison once called it here) from having grown and eaten too many about a decade ago when I lived in the UK.
One of my longtime favorites is the Zucchini Lemon Cookies from Food 52. It won “best zucchini recipe” back when Food 52 used to do those contests. I also recently made the Summer Squash Boursin Galette from Caro Chambers, which I made with yellow squash, but zucchini would be awesome too. Even my son whose not a squash fan enjoyed it!
An epic list. A huge fan of no4, Greek style, there’s a good recipe in Vera’s Kitchen. I use a combination of chick peas, grated courgette, spring onions, chopped parsley/dill/mint and grated graviera (or Parmesan if I can’t get hold of graviera).

I’m also not a huge zucchini fan. But the pickle lasagna is working for me honestly. Like lasagna with giardiniera sounds awesome???

I once (in my teens) put slices of zucchini on my puffy eyelids thinking it was a not-very-juicy cucumber. My mom got quite the laugh when she saw me!
