Loved this discussion around Moroccan cuisine! I’m currently making the Harira stew. I have a question for Nargisse:

When do I put in the lentils and cilantro? Step 2 instructs to add cilantro and lentils but then later in step 4 it says to add the lentils, and in step 5 it says to add the cilantro with the noodles. Am I supposed to divide those ingredients and add some early and then add some later on? This question is just for clarity-cause I’ve already put all of the cilantro and lentils in!! 🤣 And I know it will be delicious either way. Thank you

So sorry about this, there’s an indeed an error in Step 2. The lentils and cilantro should actually be added later in the recipe.

Steps 4 and 5 are correct as written. If you did add them earlier, don’t worry, it won’t make a major difference. The lentils will simply be softer, and the cilantro will have a more cooked flavour rather than a fresh one.

I have all the cookbooks mentioned and use Latifa Benani-Smires' recipe for harira frequently. There is both an English and French version. Also true for the Guinaudeau, Fez Vu par sa Cuisine of which I only have a French edition. I just looked at ABE Books, I don't think the asking prices are worth it for this book even though it was widely available.
