GAH! I've been wanting to read this post since it came out and finally had time to dive in. So many INCREDIBLE ideas. I'm very exctied to make quick couscous, put kimchi in my tuna salad, and make peanut-ginger and tofu noodles (among a bajillion other things!) This is a great post, Maggie.

What a great list of ideas. I"ll add my own: a rice frittata. It's leftover cold rice, brown or white, a can of mushrooms, some eggs, and green onion bits. Top with cheese when almost done, if desired. It's my absolute favorite, go-to, one-burner dinner.
