Definitely bookmarking this list for next time I'm low on energy and time (that pasta frittata is genius!). Thanks again for including me and my couscous bowl idea, Maggie ♥️
GAH! I've been wanting to read this post since it came out and finally had time to dive in. So many INCREDIBLE ideas. I'm very exctied to make quick couscous, put kimchi in my tuna salad, and make peanut-ginger and tofu noodles (among a bajillion other things!) This is a great post, Maggie.
What a great list of ideas. I"ll add my own: a rice frittata. It's leftover cold rice, brown or white, a can of mushrooms, some eggs, and green onion bits. Top with cheese when almost done, if desired. It's my absolute favorite, go-to, one-burner dinner.

I have yet to do the chilled tofu with toppings even though it would be a serious crowd pleaser in my house.

So honored to be included in such a phenomenal list of authors! I'm going to have to try that bean-tomato dish asap!
These all sound so good! If I’m totally spent I’m in a - make a sandwich that requires no chopping and no appliances (toasting) either haha
Tinned fish! Quesadillas! Couscous bowls! These cooks are speaking my language.
they're going to come in so handy when my kitchen is ten thousand degrees this summer, too.
